We’ve had this particular recipe for years and years and can trace it all the way back to the Glenghorm Resort in Ingonish, Nova Scotia, where we picked it up back in the summer of 1994. For a week that July, we traveled around Nova Scotia and just had a great time seeing the sights and talking with people. It’s a beautiful part of the world, and the people were so nice and welcoming. Now, the reason we know we picked up this recipe on that trip is not because of our phenomenal memories; instead, it’s because we still have the original postcard from the dining area where we had lunch. We wanted a treat to bring down to some friends, but we were getting bread dough together so we wanted something quick and easy. Quick and easy is good. Now, we’d also like it to be good. And since we knew of at least one person who was gluten intolerant, we thought if we could only find a fast, easy, tasty, gluten-free treat, we’d be all set. Famous(ly expensive) Chocolate Wafers

Awhile back, we went looking for those chocolate wafers that are often used to make cheesecake or tart crusts. You know the ones; they’re made by a big company whose name begins with N and ends with O, as in — once we saw the price, we said “NO way are we paying this much for a small box of cookies we could make up in 30 minutes.” So we went home, and, with a quick search on the Internet, found a recipe on the Smitten Kitchen’s website. As expected, it turned out to be really easy to make these cookies, and they tasted even better than the store-bought version. Needless to say, we’ll make our chocolate wafers from now on.
