Sorry, but you won’t see the last few photos of these cookies. At least not yet.  Probably sometime next week, though. The reason is that these are slice and bake cookies, and we prepared the dough with the idea of baking them on Monday.  Yep, for our fellow volunteers at the weekly walk/run we go to on Mondays. But, we will say that the picture in the cookbook was enough to have us try them out. That, plus we had everything we needed in house except the pistachios.

Cool mint and crispy chocolate!

Another simple post, since we were gone for part of last week. But, just because the post is simple, it doesn’t mean that the recipe isn’t delicious. After all, these Minty Chocolate Wafers are thin and crispy, like the national brand of chocolate wafers that are oh, so expensive, but with an added blast of mint flavor. And, to top it off, these are super simple to make. What could be better?

As regular readers know, we make small treats to bring down to our Monday evening walk on the nights we volunteer. It gives us the chance to try new recipes and see how the other volunteers like them. But, we often feel badly because there are a few people who don’t eat anything with gluten, and almost everything we make involves flour. Now, we could get gluten-free all-purpose flour, but we prefer finding recipes that are naturally gluten-free, at least when we can. So, when we saw this recipe in Ciao Biscotti, by Domenica Marchetti, we figured we’d give it a whirl.

Our Cocoa Nib Biscotti are so tasty that we were nearly afraid to change the recipe to make a new variety. As you can see, we got over our fears and decided on biscotti that combine cherries and almonds, which seems like a perfect pairing. How does that sound to you, fellow scratcher? Good? Good. Like the Gozinaki we made just the other day, this recipe comes from Dorie’s Cookies, by none other than Dorie Greenspan. In the beginning of the book, she covers fairly standard cookies, chocolate chip and similar ilk, but, later in the book, she has a number of different-sounding cookies, such as Gozinaki, and this one for a partly salty, partly savory, and partly sweet cookie. We were intrigued. So, we made up a batch.

We mentioned yesterday that we generally don’t make cookies as treats for other people, unless they’re special and unusual in some way (the cookies, not the people). As with today’s cookie post. Have you ever heard of cookies with caraway seeds? Well, you might have, but they’re news to us. Naturally, with the desire to make treats for our fellow volunteers this past Monday, they were immediately on the short list.
