Best and easiest tomato sauce ever!

We’ve known about this recipe for years, and, all that time, we’ve wanted to make it. So, what stopped us? Simply a lack of ingredients. We just didn’t have all the ingredients; specifically, we were lacking fennel. Normally, when we get fennel, we make up a small batch of Fennel Gratin, which we think is nearly the best way to eat fennel, but, last week when we went through the line at the CSA, we selected a nice large fennel with the idea of making Thomas Keller’s Oven-Roasted Tomato Sauce.

Homemade ketchup? Of course!

Can you make spaghetti sauce? Then you can make ketchup! Really! And it’ll be better than the stuff you buy! Really! We think the Heinz Company has a lot of explaining to do, as this, perhaps one of the most popular condiments, is also super simple to make right in your home kitchen. How in the world did they fool us?

Truth to tell, we don’t buy ketchup; we really don’t like the sweet glop they sell in the plastic squeeze bottle, as it doesn’t taste like much of anything. Occasionally, one of us will use some when we’re eating out, but mainly to add some moisture to a dry burger or fry. Not because it tastes good — any other condiment would be better — but, simply because it’s moist.

Gumbo means okra!

We picked up our food from the CSA, then had to make a mad dash off to the car repair place (our car was in the shop…), and quickly return a rental (…for several days), so, by the time we did that, we really, really, wanted something quick and easy. Like a take-out pizza. We decided against it, since our produce was as fresh as possible, and we knew we had okra. Lots of okra.

We’re still working on finishing off our second flat (15 pounds) of fresh tomatoes that we picked up through our CSA. Yeah, we know, that’s a problem everyone would like to have. And, just the other day, we made up a quick and easy soup from some of those tomatoes. At the time, we thought that, while it would be okay, it wouldn’t really knock our socks off, so we didn’t bother doing the legwork for a post. We were wrong. So, we had to make it again to share with you.

The taste of summer!

Today’s the first day of summer, so we’re celebrating with one of the best summer salads on the planet: Greek Salad. This is the typical salad that Susan had during her visits in Greece, perhaps to the surprise of those of us who are expecting some variety of leafy green lettuces, olives, and so on. Instead, like many authentic dishes, it is made with a select few ingredients, picked fresh when they’re bursting with flavor and served within minutes so you can taste every nuance.

Simple Pizza Sauce

We noticed the other day that we’ve posted how we make pizza, but we blithely note that you need pizza sauce, without letting you know how we make it. Mea Culpa. Let’s remedy that right now.

We actually make several types of pizza sauce, depending on the tomatoes that we have on hand, trying to coax out the very best flavors from those ‘matoes. This is the sauce we use when we have canned San Marzano tomatoes on hand.
