Crispy Cauliflower Nuggets

Ingredients

  • 1/2 head cauliflower cut into 1-2 inch florets
  • 1/4 cup all-purpose flour
  • 1 tsp salt
  • 1 tsp smoked paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp freshly ground black pepper
  • extra-virgin olive oil
  • 3 Tbs buttermilk
  • 1/3 cup corn meal

Instructions

  • Preheat oven to 425°F. Line a baking sheet with parchment.
  • Mix together flour, salt, paprika, garlic powder, and pepper in a small bowl.
  • Place cauliflower in a large bowl, drizzle with olive oil and toss until coated.
  • Add flour mixture and toss until coated.
  • Add buttermilk and toss until coated.
  • Add corn meal and toss until coated.
  • Spread in a single layer on prepared baking sheet. Bake for 45 minutes, stirring and flipping every 15 minutes.
  • Serve with dipping sauces.
