Baked Arancini

Ingredients

  • 1 1/2 to 2 cups leftover risotto any kind
  • 1 egg
  • 1/2 cup bread crumbs
  • Seasonings optional

Instructions

  • Preheat oven to 350°F. Line a baking sheet with a silicone baking mat or parchment.
  • In a medium bowl, mix together risotto and egg. Season as desired.
  • Place bread crumbs in a shallow bowl. Season as desired.
  • Working with your left hand, shape a tablespoon of risotto mixture into a ball about 1 1/2 inches in diameter. Drop into bread crumbs and coat with your right hand, rolling to coat sides as needed. Transfer to lined baking sheet with your right hand.

Notes

Shaping with only one hand, and using the other to apply bread crumbs is the easiest and cleanest way of making arancini.
