The Lee Brother’s Pimento Cheese

Ingredients

ounces
sharp Cheddar cheese
grated (NOT pre-grated)

cream cheese
softened
7-8
ounces
jarred roasted red peppers
finely diced

Tbs
high quality mayonnaise
Duke's, Hellmann's, or Best Food's
1/2
tsp
minced Aleppo pepper
or red pepper flake
Salt and freshly ground black pepper
to taste
Instructions
In a large bowl, stir together cheeses, red peppers, mayonnaise, and Aleppo pepper. Taste and add salt and pepper as needed.
Transfer to an airtight container and refrigerate at least 2 hours, preferably overnight.
