The Lee Brother’s Pimento Cheese

Ingredients

  • 8 ounces sharp Cheddar cheese grated (NOT pre-grated)
  • 2 ounces cream cheese softened
  • 7-8 ounces jarred roasted red peppers finely diced
  • 3 Tbs high quality mayonnaise Duke's, Hellmann's, or Best Food's
  • 1/2 tsp minced Aleppo pepper or red pepper flake
  • Salt and freshly ground black pepper to taste

Instructions

  • In a large bowl, stir together cheeses, red peppers, mayonnaise, and Aleppo pepper. Taste and add salt and pepper as needed.
  • Transfer to an airtight container and refrigerate at least 2 hours, preferably overnight.
