Almond Spread (Vegan Cheese)

Ingredients

  • 1 cup raw almonds (120 g)
  • 1 Tbs lime juice
  • 1 tsp extra-virgin olive oil
  • 1/2 tsp sea salt
  • Smoked paprika for garnish

Instructions

  • If almonds aren't already blanched, bring a small saucepan of water to a boil and add almonds. Simmer 3 minutes, then drain and rinse with cold water. Using your fingers and thumb, pop almonds from their skins. Discard skins.
  • Soak almonds in water overnight.
  • Place almonds, lime juice, olive oil, and salt in a food processor or blender and process until smooth, scraping down the sides as needed. This may take a while.
  • Transfer mixture to a small bowl and refrigerate for an hour.
  • Shape into a disk or log and sprinkle with smoked paprika.
