Crispy Smoky Salty Carrot Strips

1 large carrot peeled

1 Tbs extra virgin olive oil

1/2 Tbs maple syrup

1/4 tsp smoked paprika

1/2 tsp fine sea salt

1/4 tsp liquid smoke

Freshly ground black pepper to taste
Preheat oven to 425°F. Line a baking sheet with parchment.
Use a peeler or mandoline to cut the carrot into very thin strips. Place on prepared baking sheet in a single layer.
In a small bowl, whisk together remaining ingredients until thick and emulsified. Drizzle over carrot strips.
Bake about 15 minutes, or until browned. Let cool on baking sheet until crisp.
Use as you would bacon
