Crispy Smoky Salty Carrot Strips

Ingredients

  • 1 large carrot peeled
  • 1 Tbs extra virgin olive oil
  • 1/2 Tbs maple syrup
  • 1/4 tsp smoked paprika
  • 1/2 tsp fine sea salt
  • 1/4 tsp liquid smoke
  • Freshly ground black pepper to taste

Instructions

  • Preheat oven to 425°F. Line a baking sheet with parchment.
  • Use a peeler or mandoline to cut the carrot into very thin strips. Place on prepared baking sheet in a single layer.
  • In a small bowl, whisk together remaining ingredients until thick and emulsified. Drizzle over carrot strips.
  • Bake about 15 minutes, or until browned. Let cool on baking sheet until crisp.
  • Use as you would bacon
