Carrot and Poppy Seed Salad with Rye Bread

Ingredients

  • 1 carrot
  • juice of 1/2 lemon
  • 1 tsp poppy seeds
  • Freshly ground black pepper to taste
  • Pinch kosher salt optional
  • 2-4 Slices of rye bread
  • 1-3 Tbs spreadable cheese

Instructions

  • Trim, peel, and grate carrot into a small bowl. Add remaining ingredients and mix.
  • Spread a layer of cheese on each slice of bread and top with the carrot salad.
