Cherry Lambic Jam

Ingredients

  • 12 ounces pitted cherries from about a pound
  • 1/2 cup granulated sugar (100 g)
  • 12 ounces cherry Lambic beer
  • Pinch kosher salt

Instructions

  • Combine all ingredients in a non-reactive container. Stir and refrigerate overnight.
  • Place in a heavy-bottomed saucepan over medium heat and bring to a boil. Continue boiling, uncovered and stirring often, until liquid is reduced and thickened, about 40 minutes.
  • Transfer to an airtight container and refrigerate.
