Simple Cheese Filling for Pasta

Ingredients

  • 1 cup ricotta cheese
  • 3/4 cup grated Parmesan cheese
  • Pinch freshly grated nutmeg
  • 1 Tbs dried oregano basil, or flat-leaved parsley
  • kosher salt to taste
  • Freshly ground black pepper to taste
  • 1 egg
  • Bread crumbs as needed

Instructions

  • In a medium bowl, mix together ricotta, Parmesan, nutmeg, and herbs. Taste and add salt and pepper as needed. Mix in egg until uniform.
  • Filling should be stiff enough to stand without slumping when pushed off a spoon. If not, add bread crumbs and stir in.
  • Refrigerate until ready to use.
