Simple Cheese Filling for Pasta

Ingredients

cup
ricotta cheese
3/4
cup
grated Parmesan cheese
Pinch
freshly grated nutmeg
1
Tbs
dried oregano
basil, or flat-leaved parsley
kosher salt
to taste
Freshly ground black pepper
to taste
1
egg
Bread crumbs
as needed
Instructions
In a medium bowl, mix together ricotta, Parmesan, nutmeg, and herbs. Taste and add salt and pepper as needed. Mix in egg until uniform.
Filling should be stiff enough to stand without slumping when pushed off a spoon. If not, add bread crumbs and stir in.
Refrigerate until ready to use.
