Baked Beans

Ingredients

  • 1 pound dried beans
  • shortening for greasing
  • 1/4 cup diced onion
  • 2 Tbs tomato paste
  • 2-3 Tbs dark molasses
  • 1 tsp salt
  • 1 Tbs mustard powder
  • 1 tsp balsamic vinegar
  • 1/2 Tbs Worcestershire sauce
  • 1 tsp liquid smoke

Instructions

  • Place beans in a large saucepan and cover with several inches of water. Let soak overnight. Drain and rinse.
  • Place soaked beans in saucepan with about 4 cups water. Bring to a boil, then simmer until tender, about 45 minutes. Drain, reserving liquid.
  • Preheat oven to 250°F. Grease a 2-quart ovenproof dish.
  • Place beans and remaining ingredients into prepared dish. Add 1/2 cup reserved bean liquid. Stir to combine.
  • Bake covered 6 to 9 hours, stirring occasionally and adding more bean liquid if needed. Remove lid 1 hour before beans are done.
