Peel and cut potatoes into 1 1/2 inch chunks. Place in a large saucepan and cover with cold water.
Add the teaspoon salt and place over high heat until the water boils.
Reduce heat and simmer until fork-tender, about 25 minutes. Drain potatoes.
Mash potatoes with Gouda cheese, heavy cream, and butter. Add milk while mashing to achieve desired consistency.
Taste, add salt and pepper as desired.
