Smoked Gouda Mashed Potatoes

Ingredients

  • 2 pounds gold potatoes
  • 1 tsp salt
  • 1 1/2 cups grated smoked Gouda cheese (6 ounces)
  • 1/2 cup heavy cream or home-made sour cream
  • 2 Tbs unsalted butter
  • 1/2 cup milk
  • kosher salt
  • freshly ground black pepper

Instructions

  • Peel and cut potatoes into 1 1/2 inch chunks. Place in a large saucepan and cover with cold water.
  • Add the teaspoon salt and place over high heat until the water boils.
  • Reduce heat and simmer until fork-tender, about 25 minutes. Drain potatoes.
  • Mash potatoes with Gouda cheese, heavy cream, and butter. Add milk while mashing to achieve desired consistency.
  • Taste, add salt and pepper as desired.
