Caramelized Onion Chutney

Ingredients

  • 1 Tbs olive oil
  • 1 cup thinly sliced onion
  • 2 tsp mustard seeds
  • 1/2 cup brown sugar (100 g)
  • 1/3 cup balsamic vinegar
  • 1/3 cup red wine vinegar
  • 1/4 tsp kosher salt

Instructions

  • Place oil in a small saucepan over medium heat. When hot, add onions and mustard seeds and cook, stirring occasionally, until onions are translucent and beginning to brown, about 20 minutes.
  • Add sugar, vinegars, and salt. Bring to a boil, then reduce to a simmer until thickened, about 45 minutes.
  • Pack in a clean jar and refrigerate.
