Pesto Rustico

Ingredients

  • 1 cup basil leaves packed
  • 1-2 garlic cloves minced
  • 1/4 cup grated Parmesan cheese (or Grana Pardano)
  • 1/4 cup walnuts toasted
  • Kosher salt
  • Freshly ground black pepper

Instructions

  • Using a large chef's knife, chop garlic and basil together.
  • Add walnuts, and continue chopping until finely minced.
  • Transfer to bowl, add cheese and olive oil, and use a spoon to combine into a paste.
  • Taste. Add salt and pepper as needed.
