Preheat oven to 350°F. Line two baking sheets with parchment paper or silicone baking sheets.
In a small bowl, add yeast to water, stir and let sit 10 minutes. Stir until all yeast is dissolved.
In a medium bowl, combine flour and salt.
Using your hands, mix in yeast water and butter until a dough forms.
Knead 5 minutes.
Rest 5 minutes.
Knead 5 minutes.
Cover dough and let rest 10 minutes.
On a lightly floured work surface, roll dough to 1/8 inch thick.
Transfer to baking sheets, and, using a small floured biscuit or cookie cutter, cut out crackers. Remove excess dough.
Dock with tines of a fork, sprinkle with sea salt.
Bake for 20 minutes or until a golden brown.
Let cool on pans.
