Thomas Keller’s Soup Crackers

Ingredients

  • 1/4 cup very warm water 110-115°F
  • 3/4 tsp dried yeast
  • 3/4 cup plus 2 Tbs flour 110 grams
  • 1 tsp kosher salt
  • 2 2/3 Tbs unsalted butter room temperature
  • fine sea salt

Instructions

  • Preheat oven to 350°F. Line two baking sheets with parchment paper or silicone baking sheets.
  • In a small bowl, add yeast to water, stir and let sit 10 minutes. Stir until all yeast is dissolved.
  • In a medium bowl, combine flour and salt.
  • Using your hands, mix in yeast water and butter until a dough forms.
  • Knead 5 minutes.
  • Rest 5 minutes.
  • Knead 5 minutes.
  • Cover dough and let rest 10 minutes.
  • On a lightly floured work surface, roll dough to 1/8 inch thick.
  • Transfer to baking sheets, and, using a small floured biscuit or cookie cutter, cut out crackers. Remove excess dough.
  • Dock with tines of a fork, sprinkle with sea salt.
  • Bake for 20 minutes or until a golden brown.
  • Let cool on pans.
