Glenghorm Oat Cakes

Ingredients

  • 3 cups 375 g flour
  • 3 cups 270 g rolled oats
  • 2 cups 400 g sugar
  • 2 tsp kosher salt
  • 1 tsp baking soda
  • 1 pound 454 g or 2 1/4 cups shortening
  • 1/2 cup cold water

Instructions

  • Mix dry ingredients by hand.
  • Add shortening and water, and mix thoroughly to a dough-like consistency.
  • Cover and refrigerate for at least 1 hour.
  • Preheat oven to 350°F.
  • Roll out to 1/8-inch thick in oats, cut into 2-inch squares.
  • Bake on ungreased sheets for 15 minutes or until golden brown.
  • Remove to rack to cool
