We have no idea if you can get these little peppers at the store or a farmers’ market, but, if you happen to see them, pick up some to try. We find them to be one of the best peppers around; not spicy hot — although every once in a while you might get a hot pepper — just a really nice-tasting pepper. Plus, these peppers are about the easiest thing to cook on the planet. Really. Five minutes of almost no work and you’ll have one of the best-tasting sides (or appetizers) around.

Last Saturday, we were having soup for dinner and wanted a bit of a bread product to go along with it. Who doesn’t like something bread-y to dip into broth, right? But, we didn’t want to get the last chunk of bread out of the freezer, as that’s going to be used to  make croutons for an upcoming dinner. This meant that, if we were going to have a bread, it’d have to be quick and fresh. We immediately thought of corn bread, but, before we committed, we did a quick look through Quick Breads, by Beatrice A. Ojakangas, and found this easy, fast, bread-like product (it’s not really a bread, so…).

It wasn’t because Graham crackers are so exciting; rather, what you can do with Graham crackers. Think crusts for pies, cheesecakes, tarts, s’mores and so on, and, for the best crusts, you need the best Graham crackers, right?

As it happens, both of us have suffered through colds, which means that we’re less likely to make up something exotic — why make something really special if you can’t taste it? — and have stuck to simple basics, such as soup and crackers. Now, we normally don’t buy crackers at the store (all right, to be completely honest, sometimes we do, but it’s not too often), since we have a recipe for a nice light cracker that’s pretty easy to make up. Ireland is one of our favorite places to visit. It is amazingly green and beautiful, and pictures don’t really do it justice. The first time we visited Ireland together, we rented a cottage in the west just outside of the small town of Corofin. One day we stopped and talked with the caretaker, Paddy, who explained that he was busy applying weed killer to the grass near the edge of the driveway. Yep, without weedkiller, that grass would have taken over the driveway in a few months.
