What an odd name: Dutch Baby Pancake.

Super easy! Super tasty!

We’ve known about Dutch Baby pancakes for years, but we never had one. We knew that they are basically a large popover type dish that you bake in the oven, and for a long time we just figured that if we were going to eat something like popovers, we might as well eat popovers. Then we had a friend tell us about a Cacio e Pepe Dutch Baby that she made and showed us pictures of how well it turned out. With an example like that, we knew we had to try one (Thanks, CL!) . We figured you’d like to try one yourself.

Buckwheat Pancakes

Slightly nutty, very delicious.

While we’ve not been going many places during the pandemic, we have been trying to keep it interesting at home. For example, most Sunday mornings we have a somewhat special breakfast. Now, we’re not talking a huge breakfast buffet, or anything like that, just something a bit more special (normally we have a bowl of oatmeal with raisins and a bit of our Best-Ever Scratched Granola sprinkled on top). So sometimes we have muffins, and sometimes pancakes, and lately we’ve added in the star of today’s post: buckwheat pancakes.

Barley Pancakes

Just a bit of maple syrup and these are perfect.

Are pancakes one of those things that you only get when you go out for breakfast? Not us; it’s just too easy to mix up a batch that’s the perfect size for the two of us. And, if you think pancakes are kind of boring, think again. Because pancakes don’t rely on the gluten in flour to hold them together — it’s the egg that does it — you can swap out pretty much any type of flour for the wheat flour and have great- tasting pancakes made from, well, in this instance, barley flour.

Wild Blueberry (or Blackberry) Muffins

We made up these muffins for breakfast on Valentine’s Day. Now, we know that this post is too late for you to do the same, but you can always keep this recipe in mind for another special day. And, what’s really nice, as you’ll see, is that the muffin batter is made the day before, so you can get up in the morning, heat the oven, spoon out batter, and have fresh, warm muffins in under an hour.

We were looking for an easy, but tasty, dish to make for breakfast. Ideally, we should be able to do most of the work the night before, so there is only a bit to do the next morning when everyone is still sleepy-eyed. The most obvious choice was the Pain Perdu Casserole or Baked French Toast.

Best Buttermilk Pancakes

Oh my, we can’t believe that we haven’t posted this buttermilk pancake recipe before now. These are the very best buttermilk pancakes you will have. They are tender, light and fluffy, with just a very slight crispiness around the edges. While we have sourdough pancakes a lot (mainly to use up the excess starter that we have each week, we save these for when we want a special breakfast treat.
