Mini Mint Milano Cookie
Once the ganache has firmed in the refrigerator, use a small offset spatula (or knife) to spread a bit between a couple of cats’ tongues.

We know we refer to our weekly downtown walk a lot, and that a number of recipes come from wanting to bring something down for the other volunteers whenever we’re helping out. Last night, we decided on what we’re calling Mini Mint Milano Cookies, or MMM Cookies for short. It just so happens that our weekly walk also has the initials MMM, so we figured that was appropriate.

Now, we aren’t going to show the whole process, because these are really nothing other than Cats’ Tongue Cookies with a bit of Mint Chocolate Ganache spread between the two halves. We’ll show you how we made the ganache, though. We will say, though, that this recipe makes about twice as much as you’ll need, but, hey, it’s chocolate; we bet that you’ll come up with a use for the extra.

Mini Mint Milano Cookies (MMM Cookies)


  • 1 batch Cats Tongue Cookies, baked and cooled
  • 100 g (1/3 cup) chocolate chips
  • Pinch kosher salt
  • 100 g (1/3 cup + 1 Tbs) heavy cream
  • 1/2 tsp mint extract

Abbreviated Instructions

Place chocolate chips and salt in a heat-proof bowl.

Heat cream in a small saucepan over medium heat until steaming. Pour over chocolate and let stand 3 minutes. Whisk smooth, then whisk in extract.

Refrigerate until firm, about an hour.

Spread ganache between two cookies and keep refrigerated.

Ingredient discussion:

We went with chocolate chips, since we have some that we need to use. If that weren’t the case, we’d have used a dark chocolate, probably Callebaut 70% cacao. For the heavy cream, we try to buy organic, since it’s only cream. Nothing else. We don’t think we need anything else in cream.

Well, we can’t really say there’s much of a procedure to making ganache: basically, melt chocolate in heavy cream, then let it cool. We will post a few pictures, though.

Working with a scale makes it easy to measure out the same amounts of ingredients (by weight, of course).

Let the hot cream do its work in melting the chocolate. Just let it stand for 3 minutes.

The ganache will be nice and smooth with a bit of whisking. It’ll look too thin, but not to worry.

We weren’t sure how minty we wanted the chocolate, so we added 1/4 tsp at a time and tasted as we worked.

Who doesn’t like ganache? Or chocolate with mint? So, we know that these are great, right? But, we will say that making cats’ tongue cookies are a little bit troublesome. It’s difficult to pipe them all to the same length and size, but that just shows that these are 100% scratched-out cookies. Four stars.
