Oh, Cushaw!

What’s that funny looking squash? Oh, it’s a cushaw!

That’s what we picked up this week from the CSA, a cushaw squash. Never heard of it? Even so, we are pretty sure that you’ve had it and not known it, because it’s widely used for canned pumpkin. Sure, I know you’re saying that the ingredient list on your can is 100% pumpkin, and it’s true, but only because cushaw squash is a type of pumpkin. The reason cushaw squash is used for canned pumpkin is that it’s a firmer, less stringy, and less moist squash. Basically, it makes a better pumpkin.

This week’s haul consisted of

  • Cushaw squash (1)
  • Red onions (2) traded for more okra
  • Okra (1 basket)
  • Spaghetti squash (1)
  • Red LaSoda potatoes (6)
  • Roasted sweet peppers (1 bag)
  • Eggplant (5)
  • Summer squash (4)
