Cukes for Pickling

Looks like cucumbers are in our future. Good thing they’re so easy!

So, what did we get from the CSA this week?

  • Bell peppers (4)
  • Cucumbers (2)
  • Summer squash (4)
  • Red La Soda potatoes (3)
  • Sweet potatoes (3)
  • Gold onions (2)
  • Tomatillos (1 basket)
  • Roasted Red peppers (1 bag) traded for two more cukes.

Besides that, we also saw a few extra sweet potatoes in the surplus basket, and, since they’re one of the most nutritious vegetables on the planet, we popped a couple into our tote bag.

Since we also picked up 4 large cucumbers, we’re sure that we’ll be making a batch of pickles, most likely the Super Easy Pickles; they taste just like bread and butter pickles, and take only 8-10 minutes to whip up. Before we commit to that, we’ll look around to see if we can find a new kind to try first.

As far as how we’ll use the remaining produce, we’ve already put a couple of the bell peppers and a tomatillo into a batch of Gumbo that we had last night served over small new red potatoes. Everything else is up in the air.

Update 18 September. All the cukes went into two batches of Super Easy Pickles. The summer squash was small enough that we made stuffed squash for dinner one night. We slipped another tomatillo into lentil soup that we had for lunch, but that still leaves a couple of tomatillos awaiting their demise. The sweet potatoes went into Two Potato casserole, and the red potatoes went into Potato and Parmesan Cannelloni (recipe tomorrow).
